Ground Beef & Sweet Potato Hash

If I’m honest, eating healthy, whole foods is a struggle for me sometimes. I grew up on processed and still crave it to this day. I’m also, not really a salad girl, because they just don’t satisfy, which is why I love recipes that are easy to make and offer a filling, nutritious meal.

This is a great recipe if you’re trying to include more veggies and good carbs into your diet. Sweet potatoes are packed full of nutrients like Vitamins C, A and manganese. They are low in calories, but combined with the protein of beef, they will fill you up and keep you satisfied.

Ingredients for Beef & Sweet Potato Hash:

How to Make Ground Beef & Sweet Potato Hash:

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for about 10-15 minutes, stirring occasionally, until they are soft and begin to brown.

Remove the potatoes from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Add the ground beef, breaking it up with a spoon, and cook until browned and fully cooked. Drain any excess fat, if necessary.

Add the diced onion, bell peppers, and minced garlic to the skillet with the ground beef. Cook for another 5 minutes, until the vegetables are tender.

Return the cooked sweet potatoes to the skillet. Add the smoked paprika, ground cumin, salt, and pepper. Stir to combine and cook for an additional 5 minutes or until all veggies are soft, allowing the flavors to meld together.

Garnish with chopped fresh parsley and serve hot.

  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 tbsp olive oil divided
