Chicken Bacon Ranch Sheet Pan Dinner

There’s nothing better than a quick and easy dinner recipe that uses only one pan and tastes delicious.

I really enjoy making sheet pan dinners because they’re really versatile and normally pretty healthy, plus they’re easy to make low-carb.

This recipe for Chicken Bacon Ranch Sheet Pan Dinner has lots of comforting flavors with the cheese, potatoes and bacon while also including a serving of protein and vegetables.

How to Make Chicken Bacon Ranch Sheet Pan Dinner:

Preheat the oven to 400 degrees and grease a large baking sheet with nonstick cooking spray.

In a large bowl, combine the potatoes, ½ tablespoon of olive oil, and 1/3 of the ranch seasoning packet. Stir to coat the potatoes, then transfer to the baking sheet.

Add the frozen broccoli to the bowl, ½ tablespoon of olive oil, and 1/3 of the ranch seasoning packet. Stir to coat, then transfer to the baking sheet.

Place the raw chicken pieces in the bowl and add the remaining olive oil and ranch seasoning. Stir to coat, then transfer to the baking sheet.

Top all ingredients with the cut-up bacon.

Bake in the preheated oven for 20 minutes, then remove the pan from the oven and stir the ingredients slightly.

Top with shredded cheese and return to the oven to bake for 10 minutes or until cheese is melted.

  • 1 ½ tablespoons olive oil
  • 1 packet ranch seasoning mix (or homemade)
  • 4 russet potatoes cut into one inch cubes
  • 1 10- ounce package frozen broccoli florets
  • 1 ½ pounds boneless skinless chicken breasts cut into bite-size pieces
  • 4 strips bacon cut into one-inch pieces
  • 2 cups shredded cheddar jack cheese

Instructions

    This recipe sounds amazing, but I will definitely boil my potatoes just a little bit before adding to pan. It took closer to an hour and 20 to bake in the oven. After 40 minutes, potatoes were still not soft. Otherwise, tasted great!

    I agree with the comment by another poster to boil the potatoes a bit, and also that it took much longer than the advertised 30 mins.

    Definitely bowl potatoes! Good healthy meal, but potatoes were still hard, so we had to eat the chicken and broccoli only, because we were starving.. lol

      I cut my potatoes into 1/4" pieces, used fresh broccoli and also included sliced baby carrots. I didn't have fresh bacon so I used bacon topping (for salad) and the whole thing cooked to perfection.

    This was really good! I only used one potato and fresh broccoli! My bacon was still a bit raw, I should have made sure to flip the pieces. Great dish, lots of flavor!

    I believe someone asked this already but I am still a little confused. Is each serving 772 calories? Or are all 4 servings (the whole pan) added together to get 772 calories?

    With the comments about boiling potatoes, I wonder if anyone has used frozen hash browns instead of potatoes? Not the shredded ones, but the diced type.

    Four russet potatoes is way too much for this recipe, I think. It takes up an entire baking sheet! There’s no room for chicken or broccoli! I am in the process of making this recipe right now, and I have to stagger the cooking times. I have potatoes on top for 15 minutes and the chicken and broccoli on the bottom for 15 minutes. Then I’m going to switch them. I’m not quite sure why I’m screwing this up? The potato is definitely way too much. I guess for next time, if I make it again, I’ll remember this.
