Sausage and Vegetable Sheet Pan Dinner Recipe
Sheet Pan Dinners are my favorite way to get fresh vegetables into my family. They’re great because you simply choose a fast cooking protein such as chicken, sausage or eggs, then add a starch like potatoes or gnocchi and finish it off with fresh vegetables.
I’m a huge advocate of being creative in the kitchen and making meals from leftovers or fragments of what you have on hand. Sheet Pan Dinners are a great way to gather those fragments of food that need to be used up and putting them together into one meal, ensuring that food and money aren’t going to waste.
This recipe for Cajun Sausage and Vegetable Sheet Pan Dinner is full of fresh spices and flavors. Feel free to use any kind of smoked sausage that you want in place of the cajun style. Also, you could switch the white potatoes for sweet or the onions for mushrooms. Either way, it’s going to come out amazing. - green beans

How to Make Sausage Sheet Pan Dinner:
Preheat oven to 400˚F and line a large rimmed baking pan with parchment paper or spray with nonstick cooking spray.
Combine the potatoes, green beans, onion, and bell peppers in a large bowl. Toss the vegetables with olive oil, garlic, and Cajun seasoning, making sure that all vegetables are completely coated with oil and seasoning.
Spread the seasoned vegetables out in a single layer onto the prepared sheet pan.
Next add the sliced sausage.
Bake for 20-25 minutes or until the sausage is browned and the potatoes are fork-tender. Serve immediately.

- 1 ½ pound baby or new potatoes quartered
- 1 – 12 ounce package fresh green beans trimmed
- 1 red onion cut into wedges
- 2 bell peppers any color, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 1 teaspoon Cajun seasoning
- 2 pounds Andouille or Cajun sausage cut into 1-inch slices
Instructions
