Tortellini Pasta Salad

Summertime to me means lots of pasta salad. I like it because it can be made ahead of time and served as a complete meal. Also, you can easily use up any produce you might have hanging around in your fridge or utilize some of those garden fresh veggies that you have coming in from the farmer’s market or off of your own property.

This Tortellini Pasta Salad is made Italian-Style with all of the flavors of anitpasto that you desire including pepperoni, olives, mozzarella, tomatoes and Italian dressing. It’s easy to whip up and tastes delicious served as a complete meal or as a side dish at a potluck. I know you’re going to love this recipe.

What’s in Tortellini Pasta Salad?

  • tortellini
  • Italian salad dressing
  • mini pepperoni
  • shredded mozzarella cheese
  • bell pepper
  • red onion
  • sliced black olives

How to Make Tortellini Pasta Salad:

Prepare tortellini according to package instructions.

Drain and rinse tortellini in cold water.

Toss the cooked tortellini in half of the salad dressing and set aside to cool while you prep the rest of the ingredients.

Once the pasta has cooled, add the remaining salad dressing, pepperoni, mozzarella cheese, bell pepper, onion, and black olives.

Carefully stir the ingredients together until well combined.

Cover the bowl and refrigerate for at least one hour, then stir the pasta salad again before serving. Enjoy!

Ingredients

  • 1 package frozen or refrigerated tortellini prepared
  • ½ cup Italian salad dressing I used Olive Garden
  • 1 cup mini pepperoni
  • 1 cup shredded mozzarella cheese
  • 1 green bell pepper finely chopped
  • 1 red onion finely chopped
  • 1 3- ounce can sliced black olives drained

Instructions

  • Prepare tortellini according to package instructions.
