Chicken Cabbage Stir-Fry

If you’re trying to eat low-carb, then this Chicken Cabbage Stir-Fry is definitely for you. It’s similar to my Egg Roll in a Bowl Recipe, but it’s got some different flavors in it. It’s a great wintertime meal because the cabbage and tomato juice give you a huge immune boosting dose of vitamin C. It’s full of healthy and delicious ingredients and it’s super easy to whip up making it a win-win in my book.

This recipe is definitely going into my meal planning rotation. If you love cabbage, then I know you’ll really like this. Enjoy!

How to Make Chicken Cabbage Stir-Fry:

makes approx 10 cups

Add oil and seasonings to large frying pan over medium heat. Stir.

Add cabbage, onion, carrots and chicken to pan. Let saute for approx. 5 minutes.

Add tomato juice (or chicken broth) to pan and let simmer for 15-20 minutes or until cabbage is cooked through and the liquid has reduced to very little.

Ingredients

  • 4 tbsp oil any that you prefer
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp paprika
  • salt and pepper to taste
  • 1 small head of cabbage shredded or diced
  • 1 onion diced
  • 2 medium carrots shredded
  • 2 cups cooked and shredded chicken
  • 1.5 cups tomato juice OR chicken broth + 1 tbsp tomato paste

Instructions

  • Add oil and seasonings to large frying pan over medium heat. Stir.
  • Add cabbage, onion, carrots and chicken to pan. Let saute for approx. 5 minutes.
  • Add tomato juice (or chicken broth) to pan and let simmer for 15-20 minutes or until cabbage is cooked through and the liquid has reduced to very little.
