Chicken Cabbage Stir-Fry
If you’re trying to eat low-carb, then this Chicken Cabbage Stir-Fry is definitely for you. It’s similar to my Egg Roll in a Bowl Recipe, but it’s got some different flavors in it. It’s a great wintertime meal because the cabbage and tomato juice give you a huge immune boosting dose of vitamin C. It’s full of healthy and delicious ingredients and it’s super easy to whip up making it a win-win in my book.

How to Make Chicken Cabbage Stir-Fry:
makes approx 10 cups
Add oil and seasonings to large frying pan over medium heat. Stir.
Add cabbage, onion, carrots and chicken to pan. Let saute for approx. 5 minutes.
Add tomato juice (or chicken broth) to pan and let simmer for 15-20 minutes or until cabbage is cooked through and the liquid has reduced to very little.

Chicken and Cabbage Stir-Fry Bowl
Ingredients
- 4 tbsp oil any that you prefer
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 tsp paprika
- salt and pepper to taste
- 1 small head of cabbage shredded or diced
- 1 onion diced
- 2 medium carrots shredded
- 2 cups cooked and shredded chicken
- 1.5 cups tomato juice OR chicken broth + 1 tbsp tomato paste
Instructions
