Homemade Blueberry Bread – Easy Quick Bread for Breakfast

If you like blueberries, then you’re going to love this homemade blueberry bread that is quick and easy to make and tastes amazing. It makes the perfect breakfast or snack on the go!

Homemade Blueberry Bread

I don’t know about you, but I love a good quick bread for breakfast. Quick breads are great because they can be made the night before and eaten through out the next couple of days.

They’re quick to make, use common ingredients and great for beginner bakers, as long as you are careful not to over mix your dough. This blueberry bread is so good paired with eggs or sausage in the morning.

If you want to change things up a little, then you can add 1-2 tsp fresh squeezed lemon juice to the bread and create a glaze (as shown below) for a more decadent bread. Either way quick breads like this blueberry bread are great to have on hand for a fun homemade treat.

We love to pick fresh blueberries every summer and freeze them to use in recipes just like this one, so we can have fresh blueberry flavor all year long. Enjoy the recipe friends!

How to Make Blueberry Bread:

Preheat oven to 350. Grease a 9″x5″ loaf pan. (These are my favorite!)

In a large bowl, mix flour, sugar, baking powder, and salt.

Cut butter into cubes, add to bowl with flour mixture.

Using a pastry blender or a fork, cut the butter into the flour mixture until it resembles fine crumbs.

In a medium bowl, beat milk, eggs and vanilla extract.

Stir egg mixture into flour mixture until just moistened and mixed. You do not want to over mix your dough.

Gently fold in blueberries until evenly dispersed.

Bake 60 minutes or until toothpick inserted into the center comes out clean.

Allow to cool for at least 10 minutes before slicing and serving.

Optional Glaze:

1/2 cup powdered sugar

2 tbsp milk

1 tsp vanilla extract OR lemon juice

Whisk all ingredients together until well combined. You may need to adjust the amount of milk.

When bread has cooled, pour glaze over the top before serving.

How to Make Blueberry Muffins:

Mix ingredients as stated above, pour batter into a greased muffin tin.

Bake at 350 for 20-22 minutes.

How to Freeze Blueberry Bread:

Once bread has cooled, remove from pan and wrap in plastic wrap.

Next, place bread in a labeled gallon size freezer bag.

Bread will keep 3 months in the freezer.
