Slow Cooker Lasagna Soup

Lasagna is such a delicious and comforting dish, but can take quite a bit of prep work and is also a pretty heavy entree. If you’re in the mood for Italian flavors, but need to prep ahead of time, you’ll love this recipe for Slow Cook Lasagna Soup.

It contains all of the comforting flavors of lasagna, without the time intensive labor. Your family will love the flavors of tangy tomato, savory sausage and tender noodles topped with creamy cheese and sour cream, especially if served with my Copycat Olive Garden Breadsticks. Ingredients for Slow Cooker Lasagna Soup:

  • Italian Sausage
  • onion
  • garlic
  • tomato sauce
  • diced tomatoes
  • chicken broth
  • bow tie noodles (or break apart lasagna noodles)
  • salt and pepper to taste
  • sour cream (for serving)
  • shredded Mozzarella (for serving)

How to Make Slow Cooker Lasagna Soup:

Cook sausage over medium high heat, breaking it apart as it cooks.

In slow cooker, add all ingredients, except for the noodles.

Stir and place lid on top.

Cook on low for 6-8 hrs or high 3-4.

One hour before cooking time is done, turn up to high.

30 minutes before serving, stir in the noodles, checking every 15 minutes or so for doneness.
