Grilled Zucchini Foil Packets

I’m always looking for new grilling recipes, especially ones that use fresh garden produce. This grilled zucchini makes a delicious side dish for chicken, pork, fish or steak and is really easy to put together.

You could prep these ahead of time and store them in the fridge or cooler until it’s time to fire up the grill or head out on a camping trip.

This recipe is pretty simple, but you can jazz it up if you feel the need. Onions or mushrooms would make a great addition and you could even marinade your veggies beforehand if you so desire. I like to use a mixture of soy sauce, Wocestershire sauce and honey for my marinades. Now, who’s ready to grill up come veggies??

How to Make Zucchini Foil Packets:

Place all ingredients in a large bowl and toss to combine.

Cut two 12×12 inch pieces of aluminum foil.

Spread the zucchini mixture evenly over both pieces of foil.

Chopped and seasoned zucchini piled in the center of a piece of foil.

Fold the sides over the top of the zucchini, then roll up each end to form a packet.

Place both packets on a hot grill over indirect heat, with the seam of the packet facing up.

Put the lid on the grill and cook for 10 minutes, until the zucchini is cooked through.

Ingredients

  • 2 to 3 medium zucchinis sliced and cut into quarters
  • ½ tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 garlic cloves minced

  • Place all ingredients in a large bowl and toss to combine.

You may want to adjust the cooking time depending on how you like your zucchini.
