3-Ingredient Zucchini Cheesy Rice

  I’m an avid gardener, which means I deal with a LOT of zucchini. Zucchini is one of those crops that yields a TON of produce per plant and if you’re not careful you just might end up with more than you intended.

Last summer we had a bumper crop and I was forced to find new ways to use the stuff besides in my delicious Double Chocolate Zucchini Bread or my Greek Yogurt Zucchini Bread.

  Enter this recipe. I made it over and over last summer because it was so easy and good! My kids didn’t even know they were eating zucchini and everyone loved it. Give it a try. I know you’ll love it too.

How to Make Zucchini Cheesy Rice:

Mix all ingredients together in medium mixing bowl.

Serve warm and enjoy!

Tip: For more flavor, use chicken broth instead of water to cook rice.

Ingredients

  • 3 cups cooked rice
  • 1 cup shredded zucchini
  • 1 cup shredded cheddar cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • salt & pepper to taste

Instructions

  • Mix all ingredients together in medium mixing bowl.
  • Serve warm and enjoy!

    Is the Zucchini cooked when you add, do you cook it after all the ingredients are added together, it or is it uncooked? Sorry, I am confused, but this does sound like a great and easy recipe.

      You do not cook the zucchini, just mix it in with the other ingredients.

    Have you tried making this recipe with zucchini that has been shredded then frozen? I always end up with so much extra zucchini I shred it and freeze it in 2 cup portions for use over the winter. Just wondering if you think that would work after it was thawed out

      Yes, I freeze zucchini to make bread all the time. You will just thaw the zucchini and squeeze out the excess moisture before adding it to the batter.

    can You put this in a casserole dish and bake a little to melt everything together because I cook my rice in advance plus I want to add shredded carrots, what do you think on both please.

      Yes, that would be fine. I would do 350 F for 10 or so minutes or until the cheese is melted.
