One Pan Easy Beef Burrito Skillet
My family loves Mexican food and I try to include it in our meal plan at least once per week. I enjoy it because it’s generally easy to put together and also is a pretty frugal choice consisting of rice and beans with meat being optional in most dishes.
This recipe for a beef burrito skillet is a one pan meal (my favorite kind to make!) and full of all of the Mexican flavors that you love like rice, beans, beef, tomatoes and green chilies.
It’s also extremely versatile. Feel free to swap the beef for pork or chicken and the black beans out for pinto if you like. You can also top it with whatever taco toppings that you normally enjoy.

Ingredients:
- ground beef
- onion
- yellow bell pepper
- diced tomatoes
- diced green chilies
- taco seasoning
- black beans
- uncooked rice
- beef broth or water
- lime
- cilantro
- avocado
How to Make a Beef Burrito Skillet
In a large skillet, cook the ground beef, onion, and bell pepper, breaking it apart, until it’s browned and cooked through.
Remove the beef and vegetables, draining excess fat.
While the beef is removed, add the tomatoes and green chilies to the hot pan.
If the tomatoes are fresh, cook for 5 minutes or until softened.
Return the beef and vegetables to the skillet.
Add taco seasoning and stir well.
Add the drained black beans, stirring everything together and allow to simmer for 5 minutes.
Add the uncooked white rice and beef broth to the skillet.
Bring to a boil. Reduce heat to a low simmer, cover the skillet, and simmer for 20 to 30 minutes or until the rice is tender. Stir often to avoid burning.
Garnish the beef burrito skillet with sliced limes, chopped fresh cilantro, and/or diced avocado.
(Optional) Serve with cheese and sour cream.

- 1 lb lean ground beef
- 1 onion chopped
- 1 yellow bell pepper seeded and diced
- 1 cup diced tomatoes canned or fresh
- 1 – 4 oz can diced green chilies drained
- ¼ cup taco seasoning
- 1 – 15 oz can black beans drained and rinsed
- 1 cup uncooked white rice
- 2 ½ cups beef broth
- 1 lime for serving
- Freshly chopped cilantro for serving
- Diced avocado for serving
- Sour cream and shredded cheese for serving
Instructions
- In a large skillet, cook the ground beef, onion, and bell pepper, breaking it apart, until it’s browned and cooked through.
