Easter Egg Cake Mix Cookie Bars

Homemade chocolate chip cookies are one of my favorite desserts, but if I don’t have the time or desire to roll out cookie dough, I turn to making chocolate cookie bars instead. Cookie bars are a great alternative because they are quicker and easier to make than regular cookies and they taste just as good!

This recipe uses a cake mix, making it even more simple to put together and with the addition of the Easter Egg M&Ms they become something really special that you can serve to brighten just about anyone’s day. This recipe is even simple enough for small children to help make. I know you and your loved ones will enjoy this recipe. Happy Baking Friends!

What Ingredients are used in Easter Egg Cookie Bars?

  • white cake mix
  • eggs
  • butter
  • water
  • vanilla extract
  • mini chocolate chips
  • Easter M&Ms (I used peanut), plus more for decorating

How to Make Easter Egg Cake Mix Cookie Bars

Preheat the oven to 350 degrees and spray a 9×13 baking pan with nonstick cooking spray.

Stir together the cake mix, eggs, butter, water, and vanilla extract.

Ingredients in a white mixing bowl.

Fold in the chocolate chips.

Mixed batter with chocolate chips before being mixed.

Spread the batter into the prepared pan.

Top with M&Ms.

Place in the preheated oven and bake for 20 minutes, until a toothpick inserted into the center of the cookie bars comes out clean.

Remove the pan from the oven and immediately top with additional M&Ms, if desired.

Lightly press the candy into the top of the cookie bars, then allow them to cool completely.

Finished cookie bars before being cut.

When the cookie bars are cool, cut into 15 pieces to serve.

  • 1 box white cake mix
