I don’t know about everyone else, but this mama has put on a few extra pounds during the craziness of 2020 and I’m ready to kick my butt into gear and eat healthier before the holidays get here when temptation seems to be everywhere.
I’ve been trying to eat low-carb most of the time and stay away from grains as much as possible and it’s really been working well for me.
Anyway, this Warm Kale and Bacon Salad is really quick and easy to put together and fits in perfectly with my current low-carb lifestyle.
Some people think kale has a strong flavor, but it really mellows when cooked, so if you’re not a kale fan, you should still give this salad a try. Enjoy the recipe friends!
How to Make Warm Kale and Bacon Salad:
Cut bacon into small pieces.
In a large skillet over medium heat, cook the bacon until crispy and brown.
Remove the bacon and set aside on paper towels.
Add the diced onion to the skillet and cook in bacon grease until softened.
Add the kale and garlic to the skillet and stir with the onion.
Cook approx. 5 minutes or until kale is softened.
Sprinkle with cooked bacon just before serving.

- 6 cups kale stems removed and coarsely chopped
- 6 slices bacon
- 1 small onion diced
- 3 cloves garlic minced
- Salt and pepper to taste
