Cheesy Sloppy Joe Baked Potatoes

I know your family is going to love these Cheesy Sloppy Joe Baked Potatoes. This recipe swaps the usual bun for a heartier and healthier baked potato.

The filling is made with ground beef, ketchup, brown sugar and other spices that make this dish a great addition to your weeknight dinner rotation. For an even healthier version you could easily swap the ground beef for ground turkey and the brown sugar for honey.

Feel free to cook your baked potatoes in the way that works best for you. I personally like to make them either in the slow cooker or the Instant Pot.

Also, try topping the Cheesy Sloppy Joe Baked Potatoes with things like sour cream, green onion, or crumbled bacon for an even bigger wow factor.

How to Make Cheesy Sloppy Joe Baked Potatoes:

serves 4-6

Cook potatoes as desired.

In a large skillet over medium-high heat, brown ground beef until no longer pink.

Drain to remove excess grease.

Return beef to skillet and add ketchup, water, brown sugar, Worcestershire sauce, yellow mustard, garlic powder, onion powder, and salt.

When beef comes to a boil, reduce to low. Cover and simmer for 15-20 minutes or until thickened.

Spoon Sloppy Joe mixture over cooked potatoes.

Top with cheese and other desired toppings. Enjoy!
