Healthy Sheet Pan Chicken Sausage and Vegetables

Dinner time can be a grind that is difficult to pull off day after day, which is why I love using Sheet Pan Dinners that enable me to get a healthy meal on the table in a hurry.

All you need is a quick cooking protein such as chicken or sausage, a carb like potatoes or gnocchi and whatever vegetables that you have on hand. It’s really a great formula for putting together a tasty meal in a short amount of time, but one that also tastes fresh and is full of flavor.

For this recipe, you will be using chicken sausage, Brussels spouts, red onion and sweet potato, but feel free to switch it up any way that you like. You can even use bags of frozen vegetables such as whole green beans or cauliflower. I would not use a mixed vegetable like peas, corn and carrots because the pieces are too small for the time and amount of heat in the oven. They would probably burn pretty bad.

  • Brussels sprouts
  • sweet potatoes

  • Salt and black pepper

How to Make Sheet Pan Chicken Sausage & Vegetables:

Preheat the oven to 400 degrees F.

Prepare a large rimmed baking sheet with parchment paper or cooking spray.

In a large bowl, toss together the vegetables, olive oil, salt and black pepper.

Chopped vegetables in a mixing bowl.

Transfer the vegetables to the prepared sheet pan.

Bake for 20 minutes.

Carefully flip the vegetables over.

Add the sausage to the sheet pan.

Return the sheet pan to the oven and continue baking for an additional 20 to 30 minutes or until the vegetables are tender.
