Oven-Roasted Sweet Potatoes with Bacon

We grow a large garden every year and for some reason sweet potatoes are one of the crops that almost always do well for us. This means that we have lots of fresh, homegrown sweet potatoes all throughout the year and I’m always trying to come up with new recipes to use them up.

I use sweet potato puree in place of pumpkin puree in most recipes and no one can really tell the difference. One recipe that this works well in is my Pumpkin Chocolate Chip Muffins.

Anyway, I really love sweet potatoes, especially roasted in the oven. They’re so versatile because you can either add savory or sweet spices for two totally different flavors and they’re great for breakfast, lunch or dinner.

The Oven-Roasted Sweet Potatoes with Bacon recipe that I’m sharing with you today combines the sweetness of brown sugar and cinnamon with the salty, savory flavor of bacon.

How to Make Sweet Potatoes with Bacon:

Preheat oven to 400 degrees.

In a large bowl, combine sweet potatoes, bacon grease or butter, salt, pepper, brown sugar and cinnamon. Stir until all the sweet potatoes are coated.

Spread sweet potatoes evenly on a baking sheet.

Place sweet potatoes in the oven and bake for 20 minutes.

Remove sweet potatoes from oven and stir the pieces around the baking sheet. Top with chopped bacon and return to oven for 10 minutes.

Before serving, stir sweet potatoes and bacon to coat with the glaze on the pan.

  • 5 pieces of bacon cooked and chopped
  • 5 medium sweet potatoes peeled and cut into bite-sized pieces
  • 2 tablespoons bacon grease or melted butter
