This Slow Cooker Pesto Chicken and Rice is freezer friendly and full of flavor!

I don’t know about you, but my life gets pretty busy around the holidays and I’m always looking for frugal and healthy dinners that I can get on the table fast. That’s why I love Minute® Rice. They are my go-to pantry staple for when I want something healthy in a hurry. I love that I can make fluffy white rice in just 5 minutes or deliciously nutty 100% Whole Grain Minute® Brown Rice in just 10 minutes.

Minute® Rice has been helping families put nutritious meals on the table since 1949. My mom used to make it for us for breakfast mixed with sugar and butter when I was growing up and I still fix it for myself every once in a while and will probably make it for my own kids one day. I love that I have such a long standing history with this product!

If your looking to add more of a variety of whole grains to your diet then you should check out their newest product Minute® Multi-Grain Medley. It’s a blend of four gluten-free foods and made with only 100% whole grains, including long grain brown rice, Thai red rice, wild rice and quinoa and it conveniently cooks in just 10 minutes. I have a box of it sitting in my pantry ready to go and I can’t wait to give it try because it looks really good!

Now on to the recipe. If your a long time reader then you know how I love my slow cooker and this Pesto Chicken and Rice recipe is fast becoming one of my favorites. I froze a ton of fresh homemade pesto from my garden this past summer and this is the perfect dish to use some of it up. The oil from the pesto makes the chicken so incredibly juicy and tender. It’s fast, easy, healthy and delicious so there’s no reason not to love it!

I'm on my way to put this in slower cooker. My husband isn't fond of chicken. He is a beef and potatoes kind of guy.

I hope you like it! My husband would much rather have beef, but he liked this recipe. :)

Would you share your homemade pesto sauce? How do you freeze it? My garden has produced an abundance of basil this year!
