  Nothing says summertime to me more than pasta salad paired with fried chicken. I have fond memories of picnics and lazy days at the lake with my grandparents and a bucket of fresh fried chicken with all the fixings.

  As a busy mom of two, I love picking up an assortment of fresh fried chicken from the Wal-Mart deli to take along to summer BBQ’s and 4th of July Celebrations. They always have a nice selection to choose from and you can even pick from several different sauces to go on them.

  My husband loves the BBQ Boneless wings, my kids like the popcorn chicken and I enjoy the strips. Whatever your taste the Wal-Mart deli has got you covered for an easy summer entree. Click here to learn more.

  What better summer side is there to go with fried chicken than pasta salad? I love making big batches the night before parties and events so it’s ready and waiting to take with me the next day. This recipe is easy, tastes great and will last up to a week in the refrigerator.

 

Southwest Pasta Salad

1 – 13 oz box whole wheat pasta, cooked and drained

1 red bell pepper, diced

1 cup mayo

1/4 cup sweet pickle relish

1 can corn, drained

1 can black beans, rinsed and drained

1 can Rotel (diced tomatoes and green chiles), drained

1 tbsp taco seasoning

(approx. 1/2 pouch or make your own)
1 tbsp ranch seasoning

(approx. 1/2 pouch or make your own)

1/2 tsp salt

 

Step 1: Mix all ingredients in large mixing bowl.

Step 2: Cover and place in fridge for at least 2 hours before serving.

Enjoy!

    If I tried to make a large batch of this, how long would it last in the fridge? Or is there a better storage option for longer storage?
