BBQ Turkey Stuffed Potatoes

I’m always on the look out for recipes that use up Thanksgiving leftovers, I mean we work hard for one meal, it had better feed us a few more times, am I right??

I know you’re going to love this recipe for BBQ Turkey Stuffed Potatoes. It uses already cooked turkey, making it really easy to throw together. You could even cook your potatoes in the slow cooker or Instant Pot to make this meal even easier.

Add a side dish of leftover stuffing or green bean casserole and you’ve got yourself a hearty meal for shopping, napping, or whatever else you do on the day after Thanksgiving.

How to make BBQ Turkey Potatoes:

Preheat oven to 400 degrees.

Use knife to poke several holes in potatoes. Place potatoes in preheated oven and bake for 35 to 45 minutes or until potatoes are soft.

When potatoes are finished baking, place turkey and BBQ sauce in a small skillet. Stir to combine and cook until warm. Remove from heat and set aside.

Cut a slit in the top of the potatoes and use a fork to smash the inside of the potato. Add butter and salt.

Top potato with shredded cheese.

Top cheese with BBQ turkey.

Garnish with green onion and sour cream. Enjoy!
