Thanksgiving Leftover Turkey Cranberry Grilled Cheese

If you’re anything like me, then you think that the day after Thanksgiving is one of the best days of the year because of all of the delicious leftover recipes. I mean I love Thanksgiving day, but the day after is where it’s at, do you agree?

I love this recipe because it’s simple and straightforward, but still uses up some of these delicious turkey and cranberry leftovers. If you want to take it even farther, you could add some stuffing, gravy or mashed sweet potatoes to the mix as well, but I like this combination just fine.

How to Make Thanksgiving Leftover Turkey Cranberry Grilled Cheese:

Heat skillet to medium heat. (You may also use a Panini Press, if desired.)

Meanwhile, prepare the sandwiches by spreading one slice of each sandwich with dijon mustard.

Next, top the mustard with a slice of provolone cheese and about 4 ounces of turkey or whatever you prefer.

Spoon about 1 tablespoon cranberry sauce over the turkey and top with another slice of provolone and a final slice of bread.

Open faced sandwich with mustard, cheese, turkey and cranberry sauce before being grilled.

Spread one side of each sandwich with a generous helping of butter.

Place the sandwiches with the butter side down onto the skillet.

Carefully butter the other side of the sandwich.

Cook until golden brown on the first side, about 2 minutes being careful not to burn, and flip to brown the other side.

Press down on the sandwich with a spatula while cooking so that the sandwich is flattened.

When both sides are browned and cheese is fully melted, remove the sandwiches from the skillet and serve warm with stuffing, sweet potatoes or your other favorite Thanksgiving leftover side dish.

  • 8 pieces thick-sliced bread
