Quinoa Fried Rice is a super healthy dish that your family will love!!

Quinoa Fried Rice

Have you tried quinoa (pronounced {keen-wah})? It’s a gluten-free super grain that is packed with protein and other nutrients. Plus, it cooks fast which is a huge win in my book.

Quinoa has a pretty mild flavor making it ideal for all types of dishes including desserts. I’ve even seen a quinoa mac and cheese recipe. How cool is that?

I bought a bag of it awhile back because I like to try new foods especially when they’re so healthy. I was skeptical that my family would enjoy it though.

I decided to make a Quinoa ‘Fried Rice’ because it’s quick and I always have an abundance of fresh eggs to use from the chickens. Besides, who doesn’t love fried rice?? Actually, my husband doesn’t, BUT he told me that he liked the Quinoa BETTER than rice. Also, my three-year-old ate two bowls of it!!

I cooked up a big batch of the quinoa so I can use it in a couple of recipes this week. I can’t wait to experiment and see what dishes we like using this super grain.

 

To Cook Quinoa:

Use a 1:2 ratio (i.e. 1 cup quinoa : 2 cups water)

Bring to boil over medium heat.

Reduce to a simmer and cover.

Cook for 12-15 minutes or until water is absorbed and quinoa is soft.

How to Make Quinoa Fried Rice

Step 1: In large saucepan bring oil to medium heat.

Step 2: Add quinoa, chicken and vegetables.

Sauté until vegetables are soft (2-4 minutes).

Step 3: Mix in eggs, stirring until cooked through.

Step 4: Stir in green onions and soy sauce to taste.

Ingredients

  • 3 tbsp oil
  • 4 cups cooked quinoa
  • 2 cups cooked shredded chicken
  • 2 cups frozen vegetables
  • 4 large eggs
  • 3 diced green onions
  • Soy Sauce

Instructions

  • In large saucepan bring oil to medium heat.
  • Add quinoa, chicken and vegetables.
  • Sauté until vegetables are soft (2-4 minutes).
  • Mix in eggs, stirring until cooked through.
  • Stir in green onions and soy sauce to taste.
