Easy High Protein Breakfast Casserole
Casseroles are my go to for a healthy meal in a hurry. This Cottage Cheese Hashbrown Breakfast Casserole is quick and easy to put together and is packed with protein, making it a great option for breakfast, lunch or dinner.

Ingredients for Hashbrown Breakfast Casserole:
- diced ham
- hashbrowns
- shredded cheddar
- cottage cheese
- eggs
- green onions
- garlic salt
- dried minced onion
- black pepper
- smoked paprika
- yellow mustard
How to Make Cottage Cheese Hashbrown Breakfast Casserole:
Preheat oven to 375 F and grease a 9×13 casserole dish
In medium-sized mixing bowl, whisk eggs, cottage cheese and seasonings. (Use an immersion blender for a smoother texture, if desired.)
Layer diced ham, hash browns, green onions and cheddar cheese in the bottom of the pan.
Pour egg mixture over the top.
Bake for 45 minutes or until eggs are set in the middle of the casserole.

- 1.5 cups shredded cheddar
- 1 cup cottage cheese
- 6 eggs
- 4 green onions thinly sliced
- 1 tsp garlic salt
- 1 tbsp dried minced onion
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 tbsp yellow mustard
Instructions
