 Banana Nut Muffins

Our family goes through a lot of bananas. In fact, my 18-month-old gets pretty cranky if she doesn’t get her daily fix of “nana”. I actually have to be intentional about letting bananas turn brown for this recipe otherwise they would disappear.

 Muffins can be finicky, but these almost always turn out amazing. Just ask my husband. These are his favorite muffins of all time. The secret to a good banana muffin is to make sure your bananas are ripe (turning brown) and also to make sure you mash them up REALLY well to a soup like consistency. Enjoy the recipe!

How to Make Banana Nut Muffins:

Preheat oven to 350 and grease muffin tin.
Mash bananas really well and stir in melted butter.
Mix in sugar, egg and vanilla.
Mix in baking soda, salt and cinnamon.
Add flour and mix until just combined. Fold in walnuts.
Pour batter into muffin tin and bake for 18-20.

  • 2-3 ripe bananas
