Slow Cooker Sausage, Potato and Cabbage

I’ve been wanting to make a slow cooker dish like this for a long time and I’m so glad that I finally got around to it. I looked on Pinterest to see if there were any similar recipes and didn’t find much.

I had never cooked sausage or cabbage in the slow cooker before so I wasn’t sure how they would turn out. The cabbage did really well and held up to the long, slow cooking, however it’s little more limp than when I cook it in a skillet. The sausage did well too, but it does lose some of the flavor when you cook it all day.

If you want more flavor then I would suggest browning the sausage in a saucepan then adding it in with the vegetables just before serving.

I really love the tangy bite that this dish has as it goes well with the sausage and vegetables. It’s almost like a tangy German Potato Salad with a few extras to make it a whole meal. This recipe makes a lot so plan on having leftovers if you have a small family. Enjoy!

How to Make Slow Cooker Sausage, Potato and Cabbage:

Add vegetables and sausage to slow cooker.

In separate bowl mix chicken broth, garlic powder, onion powder, vinegar and mustard.

Pour mixture over vegetables.

Salt and pepper to taste.

Cook on low 6-8 hours or until potatoes and carrots are tender.

  • 1 head cabbage diced
  • 2-3 potatoes peeled and diced
  • 1 onion diced
  • 2 cups carrots diced
  • 14 oz - Kielbasa Sausage sliced
  • 1 cup chicken broth
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tbsp vinegar
  • 2 tbsp mustard
  • salt & pepper to taste

    Hi Missy, My mother used to make this dish in the oven. I'm not aware that she used vinegar or mustard, but just layered sliced potatoes, cabbage, the sausage, and added salt and pepper to taste. I'm not certain what temperature or for how long she cooked this dish. It was always very good. My question, what is the purpose of the vinegar? It doesn't make this dish sweet does it? I'm not a fan of sweet dishes. If you would take the time and reply via email, I would be most appreciative. I'm afraid after I hit the send button I might not find your recipe again.       I use white, but you can also use apple cider.

    I have made this over the years. Still look for inspiration. I learned today, layer is important, Cabbage on the bottom, then Onions, then Potatoes, fresh Garlic, Stock or Beer, then Bacon, and spices on top. I have used Spicy Italian sausage, Kielbasa, Ham, ham Bone, Smoked Turkey Drumstick, etc. The new thing today I will use Balsamic Vinegar, carrots, & homemade spicy Chicken stock, add a fresh Jalapeno chopped & seeded, top with spicy brown mustard. LaterI add the sausage or spiced meat, this is heavenly. My office gobbled it up while complaining about the smell! Funny! It was so good, and gone in 30 minutes! Just experiment, using the similar ingredients, as above.

      Trudy, what recipe are you looking at (sounds interesting) I don't see fresh Garlic, Stock or Beer, then Bacon listed in the ingredients.

      You can use red potatoes. I used yellow mustard from the fridge.

      You do not need to cook the sausage. It's better though in my opinion if you leave the sausage out of the crockpot and then just saute it and mix it in just before serving. When you say Italian Sausage are you referring to ground sausage?

    I'm excited to try this. I'm doing WW and this looks to be reasonably diet friendly. I'll be using Sam's Apple Chicken links, and will leave them in links for better portion control. I wonder how a chopped apple would be in this. I may try that the second time I make this if it turns out as well as I'm expecting.

    Printed recipe but didnt save the instructions. Made a guess and pressure cooked it for 30 mins. Came out fantastic. I'd say definitely add the full head of cabbage and if you do pressure cook it you probably only need 15 mins the potatoes were a bit over cooked
