Flavor-Packed Cilantro Chimichurri Sauce
Traditional Chimichurri sauce is made with parsley, garlic, oil, red pepper and vinegar that originated in Argentina, but has since spread into most Latin American cuisines.
I first made it a few summers ago when I found myself with an over abundance of herbs and wanted to make a sauce to marinate meat for the grill. Let me tell you this sauce came in strong with all of the delicious flavors and it has since become a favorite.
The recipe that I’m sharing with you today uses cilantro in place of parsley, plus lime juice giving it a huge flavor upgrade. I love chimichurri sauce because it is make with fresh ingredients, but they are simple and easy to blend into a sauce at a moments notice.
Chimichurri sauce if great as a marinade or topping for grilled meat. It would also be used as a salad dressing. I hope you enjoy the recipe.

Ingredients for Chimichurri Sauce:
- fresh cilantro
- garlic
- red wine vinegar
- extra virgin olive oil
- fresh lime juice
- dried oregano
- red pepper flakes
- salt and pepper

How to Make Cilantro Chimichurri Sauce:
Rinse the cilantro leaves and pat them dry with paper towels.
Mince the garlic cloves finely.
In a food processor or blender, combine the cilantro leaves, minced garlic, red wine vinegar, extra virgin olive oil, lime juice, dried oregano, and red pepper flakes.
Blend until smooth and well combined.
Taste the chimichurri sauce and season with salt and pepper according to your preference.
Blend again briefly to incorporate the seasoning evenly.
Transfer the chimichurri sauce to a serving bowl or jar.
Serve immediately, or refrigerate in an airtight container for up to one week.
