Sweet Potato Casserole
It’s funny to me that sweet potato casserole is served as a side for Thanksgiving Dinner because we all know it’s sweet enough to qualify as a dessert. I’ve been making a version of this casserole ever since I got married because my husband LOVES it. A lot of recipes that I see have either marshmallows or nuts on top, but I prefer oats.
We just harvested our sweet potatoes so I knew I had to whip this up and share it with you here in time for the holidays! I hope you enjoy.

How to Make Sweet Potato Casserole:
Preheat oven to 375.
Wash sweet potatoes and poke holes with fork.
Bake for 45 minutes or until fork tender.
Let cool and scoop out inside of sweet potato.
In medium bowl, mash sweet potato with fork and add eggs, vanilla, 3 tbsp brown sugar, salt, cinnamon, 3 tbsp butter.
In separate bowl, mix topping ingredients.
Spoon sweet potato mixture into small greased baking dish.
Sprinkle with topping mixture.
Bake for 30 minutes.

- 1/2 cup brown sugar
- 3 tbsp butter melted
