It’s funny to me that sweet potato casserole is served as a side for Thanksgiving Dinner because we all know it’s sweet enough to qualify as a dessert. I’ve been making a version of this casserole ever since I got married because my husband LOVES it. A lot of recipes that I see have either marshmallows or nuts on top, but I prefer oats.
We just harvested our sweet potatoes so I knew I had to whip this up and share it with you here in time for the holidays! I hope you enjoy.
Sweet Potato Casserole
4 medium sweet potatoes
2 eggs
1 tsp vanilla
3 tbsp brown sugar
pinch of salt
1 tsp cinnamon
3 tbsp butter, melted
Topping:
3/4 cup oats
1/2 cup brown sugar
3 tbsp butter, melted
Step 1: Preheat oven to 375.
Step 2: Wash sweet potatoes and poke holes with fork.
Step 3: Bake for 45 minutes or until fork tender.
Step 4: Let cool and scoop out inside of sweet potato.
Step 5: In medium bowl, mash sweet potato with fork and add eggs, vanilla, 3 tbsp brown sugar, salt, cinnamon, 3 tbsp butter.
Step 6: In separate bowl, mix topping ingredients.
Step 7: Spoon sweet potato mixture into small greased baking dish.
Step 8: Sprinkle with topping mixture.
Step 9: Bake for 30 minutes.
