Easy Homemade Strawberry Shortcake Recipe
Nothing tastes quite like summertime to me like a strawberry shortcake made with fresh berries and whipped cream. It’s the perfect lighter dessert to enjoy on a hot summer’s day.
A lot of people buy the shortcake shells from the store, but did you know that it’s actually really easy to make homemade shortcakes from scratch? Making them homemade will not only save you money, but they also taste better and are healthier for you.
The process of making shortcakes at home is basically the same as making biscuits, only with slightly differing ingredients.
You can top these shortcakes with store bought whipped cream, but why not trying making that yourself as well? All you need is heavy whipping cream, sugar and a mixer. It really is that easy to do.
As far as the berries go, freshly cut strawberries are the traditional pick, but you can add any kind of freshly cut fruit that you enjoy. Berries, peaches, plums, the sky is the limit.

Ingredients for Strawberry Shortcakes:
- flour
- baking powder
- baking soda
- salt
- sugar
- butter
- buttermilk
- egg
- heavy whipping cream
- strawberries
- blueberries
How to Make Homemade Strawberry Shortcakes:
Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
Whisk together the flour, baking powder, baking soda, salt, and 1/3 cup sugar.
Add the butter and use a pastry blender or fork to blend the ingredients until it resembles coarse sand. (Sometimes I use my hands.)
Stir in the buttermilk. (You may sub. 1 cup milk + 1 tbsp vinegar.)
Scoop the dough into balls and arrange them on the prepared baking sheet.
Brush lightly with beaten egg and sprinkle with the remaining sugar.
Bake for 15 to 20 minutes or until golden brown. Allow to cool completely.
To serve, beat together the heavy cream and sugar until stiff peaks form.
Cut one biscuit in half and top with strawberries, blueberries and a dollop of whipped cream.

- 2 tablespoons sugar
- 1 pound strawberries chopped
- 1 pint blueberries
