Chocolate Chip Baked Pancakes
Who doesn’t love a warm and fluffy pancake covered with melted butter and drizzled with sweet maple syrup? My family loves waking up to a stack of homemade pancakes on a lazy Saturday morning, but let’s be honest, pancakes take time and effort, plus make a pretty good mess in the kitchen.
That’s why I’m so excited to share this super simple recipe for chocolate chip oven baked pancakes. That’s right, you can make pancakes in the oven. What?!? This is a total game changer because now you can whip up a batch of pancake squares for a quick homemade breakfast any day of the week.
Of course, these aren’t exactly like traditional pancakes made on the griddle that we’re all familiar with, but they’re a pretty close second and I don’t think anyone will care too much because they are so good. I know you and your family will enjoy this recipe!
How to Make Baked Pancakes:
Preheat oven to 350 and line a 9×13 baking sheet with parchment paper or foil.
In a large bowl, whisk together flour, salt, baking powder, and sugar.
Next, add milk, vegetable oil, and egg, then whisk all ingredients until just combined.
Spread the mixture evenly over the prepared baking sheet and sprinkle with chocolate chips.
Bake in the preheated oven for 25 to 30 minutes or until the middle of the pancake springs back when touched.
Allow to cool in the pan for five minutes before cutting into squares and serving.
Optional: Serve with butter and maple syrup.
