Ingredients
3tbspoil
4cupscooked quinoa
2cupscookedshredded chicken
2cupsfrozen vegetables
4large eggs
3diced green onions
Soy Sauce
Instructions
In large saucepan bring oil to medium heat.
Add quinoa, chicken and vegetables.
Sauté until vegetables are soft (2-4 minutes).
Mix in eggs, stirring until cooked through.
Stir in green onions and soy sauce to taste.
Notes
To Cook Quinoa:
Use a 1:2 ratio (i.e. 1 cup quinoa : 2 cups water)
Bring to boil over medium heat.
Reduce to a simmer and cover.
Cook for 12-15 minutes or until water is absorbed and quinoa is soft.
