Instructions
Preheat oven to 350°F.
Grease or line a 9x5-inch loaf pan.
Blend the cottage cheese until smooth using a blender or food processor.
In a large bowl, whisk together the blended cottage cheese, mashed bananas, eggs, oil/melted butter, sugar, and vanilla.
In a separate bowl, stir together the flour, baking soda, baking powder, salt, and cinnamon.
Add the dry ingredients to the wet ingredients and gently mix until just combined.
Pour batter into the prepared pan.
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
