Stir together the flour and salt, then make a well in the flour and stir in the eggs and milk until a soft ball forms.

Next, knead the dough until it's soft and pliable, then cover and refrigerate until ready to roll out and cut into strips.

Place on a drying rack to air dry, then cook immediately in salted boiling water or transfer to an airtight container for storage.
