Place diced potatoes in a stockpot and cover with water. Salt according to your preference. Bring the water to a boil, then reduce heat and cook until the potatoes are fork-tender.
Drain the cooked potatoes using a strainer. In a large bowl, mix the remaining ingredients until well blended.
