Grease bowl of slow cooker with nonstick cooking spray.
Place potatoes in the bowl of the slow cooker and season with salt, pepper, and paprika.
In a small bowl, combine the ranch dressing and sour cream. Whisk the ingredients together and pour over the top of the potatoes. Add the shredded cheese and toss to coat.
Cook the potatoes on low for 5-6 hours or high for 3-4 hours.
