Sweet Potato Spoonbread, traditional spoonbread batter with the addition of sweet potato and sugar, mixed together and baked in the oven until golden brown.

Cook the sweet potatoes until fork-tender, then mash until they are smooth. Add in the butter and mix until melted.
Whisk together the sugar, eggs, vanilla, and milk until well combined, then slowly pour into the sweet potato mixture, stirring continuously.
In a separate bowl, combine cornmeal, baking powder, salt and spices. Then gradually add the buttermilk until you have a smooth batter. –
Fold melted butter into the cornmeal batter, then fold the batter into the sweet potato mixture. Bake until the spoonbread is set and the top is golden brown.
