To make the crust Pulse flour, sugar and salt, then blend in butter. Add water a little at a time to make dough. Knead the dough, then divide into two equal rectangles. Wrap in plastic wrap and refrigerate for at least two hours.

When ready to bake Roll out one pie crust onto a lightly floured surface. Press the crust into the bottom of a 9x13-inch baking dish with the edges curved slightly up the sides.

To make the filling: Whisk sugar, flour, and apple pie spice. Toss apples in the mixture until they are evenly coated. Add vanilla, then spread apples over the crust. Place remaining crust over the apples, folding the edges over. Bake for 45 to 50 minutes.
