Slow Cooker Sweet Potato Casserole

Let’s be honest, sweet potato casserole is more of a dessert than a side dish, but on Thanksgiving we can get away with it, right?

Sweet potatoes seem to be a polarizing vegetable. Either you love them or hate them. I used to think that I didn’t like them, but soon after I got married I decided to give them another chance and they soon became one of my favorite vegetables.

This Sweet Potato Casserole is so good. It’s full of the sweet flavors of cinnamon, brown sugar and ooey-gooey marshmallows.

I love that this is a Slow Cooker recipe, becasue let’s be real, hosting Thanksgiving is a ton of work and anything that can be delegated to the Slow Cooker is a big time saver.

How to Make Sweet Potato Casserole:

Add the sweet potatoes to the bowl of the slow cooker.

Mix in the butter, heavy cream, eggs, brown sugar, and cinnamon. Stir to combine.

All raw ingredients dumped in slow cooker before mixing.

Place the lid on the slow cooker and cook on low for four hours.

Immediately before serving, top the sweet potatoes with the marshmallows.

Place the lid on the slow cooker and cook for 3 to 5 minutes, until the marshmallows begin to melt. Serve immediately.

Notes

You may want to sprinkle chopped pecans on top, if you prefer nuts in your sweet potato casserole.
