Instant Pot Spanish Rice with Beef

If you’re like me, then you love just about any kind of quick and easy Instant Pot meal. The Instant Pot is so cool because it allows you to throw all of your ingredients into the pot and simply walk away.

Dinner time can be a crazy time for moms and I love using tools like the Instant Pot to be able to serve my family home cooked meals in a hurry. I also love being able to saute ingredients right in the pressure cooker, instead of at the stove, making clean up even easier.

This Instant Pot Spanish Rice with Beef is a great recipe for a quick, filling, homemade dinner. Also, it is easily customizable to your tastes. You can add pretty much any diced vegetable that sound good to you for more flavor and nutrients and top it however you like when serving.

Another reason that I love this recipe is because it is a pretty cheap and frugal meal for those of us trying to feed our families on a budget. The ground beef is the most expensive ingredient and you could easily swap beans in this dish instead for protein without the extra cost of the meat.

How to make Instant Pot Spanish Rice:

Hit the saute button on the Instant Pot.

Add the ground beef and cook until brown, chopping into small pieces.

When the beef is done cooking, add all other ingredients to the pot. Stir to combine. Turn of the saute function.

Place lid on Instant Pot and turn the valve to sealing. Set pressure cooker to manual for 10 minutes.
Natural release for 5 minutes before using quick release.

Fluff rice with a fork and serve. You may want to add shredded cheese, sour cream, salsa, etc. when serving.

What should I serve with Instant Pot Spanish Rice with Beef?

This is a pretty filling meal by itself and doesn’t really need any side dishes to go with it, but you could serve it with a side of vegetables or a small salad. Also, I would serve it with toppings such as shredded cheese, sour cream, salsa or guacamole and let everyone add what they want to the dish.

  • 1 ½ pounds beef chuck
  • 1 green bell pepper diced
  • 1 onion diced
  • 1 8 ounce can tomato sauce
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon chili powder
  • 1 cup long grain white rice
  • 1 ½ cup water

Instructions

  • Hit the saute button on the Instant Pot.

  1. This was sooo good!! Super quick and easy. I didn’t have peppers, but that would have added even more flavor. Topped with salsa, cheese and sour cream. Yummy!!
