Frugal Weekly Meal Plan (4/27-5/1)

See our frugal weekly meal plan for a family of four.

  Our family is in a busy season of life right now because our house is on the market and we’re renovating our new house. It seems like I’m constantly cleaning and/or running between properties, which is a good 30 minute drive. That being said, I’m trying not to rely too much on convenience food or eating out simply because our budget is pretty tight lately. Also, posting my meal plan here is giving me accountability to stay strong and cook from scratch. (I’m doing it for you ladies!!)

 

  On another note, since Strawberry season is almost here, I’m concentrating on using up last year’s jam and frozen berries to make room for this year’s harvest. That’s why we are eating bread and jam with a few of our meals this week and I might make a few smoothies for breakfast with some of the frozen berries.

 

  Since I try to stay within a certain budgeted amount for groceries, I have to get creative when it come’s to buying meat because it’s so expensive. This week I’m planning on buying the bulk family pack of ground beef and stretching it with oats to get more for my money. I will cook it all at once when I get home and separate it into freezer bags or keep it in the fridge for upcoming meals. I LOVE having ready-made ground beef in the freezer. It makes dinnertime that much easier for me. So anyway, enough of the chatter and on to this weeks meals.

 

Monday

Easy Baked Pasta

Tuesday

Wednesday

    I bought ground beef this week and I am planning on making tacos and meatballs. I can't wait to try you tip for mixing in oats.

      I do it every time I make ground beef. It really does make it go further and you can't taste a difference.

    What is the ratio of beef to oats when you use oats to stretch the ground beef? Is there anything you don't do a beef and oat mix for? (visiting from Frugal Friday)

      I do about 1/4 - 1/2 cup per pound. You will probably want to start out on the lower end to make sure the taste/consistency is to your family's taste. There is nothing that I don't use it with.

    I just got back from Aldi and planned on making cucumber salad from the sale cucumbers too! I was working on my menu plan earlier today and needed one more meal. I think I am going to try your creamy baked pasta - that sounds really delicious! Have a great weekend, Sherry
