Fall Garden Journal

It’s been way too long since I’ve done a garden journal. Since my last update, we’ve harvested all of our apples, sweet potatoes and butternut squash. We also planted garlic which is something that I’ve always wanted to try. Here are the shoots coming up:

We had our first hard frost last week so we had to quickly pick all of our bell peppers. Have I mentioned that our bell peppers did amazing this year?? I hope next year is as good! I chopped most of these and put them in the freezer to use in soups and casseroles throughout the winter. I ended up with 2 gallon bags full.

Here are a couple of our butternut squash. We had to pick them early because squash bugs were killing the vines so we let them ripen on our front porch. Then I made 8 cups of puree for the freezer and a Butternut Squash Pie.

From our apple tree we ended up with 7 bags of freezer pie filling, 6 quarts of applesauce, 11 pints of apple butter, 4 pints of red hot cinnamon apples, one load of dehydrated apple rings, 3 gallons of cider and we still had about a bushel left that we put in the compost due to rotting. That’s a lot of apples!

 

Overall, the garden did really well this year. We plan on expanding next year and properly spacing our tomato plants since they were out of control! I also look forward to a good crop of strawberries and blueberries next season. For now, I am patiently awaiting the arrival of seed catalogs and hoping that my husband gets around to building me a cold frame.
