If you’re trying to eat low-carb, then this Chicken Cabbage Stir-Fry is definitely for you. It’s similar to my Egg Roll in a Bowl Recipe, but it’s got some different flavors in it. It’s a great wintertime meal because the cabbage and tomato juice give you a huge immune boosting dose of vitamin C. It’s full of healthy and delicious ingredients and it’s super easy to whip up making it a win-win in my book.

Chicken Cabbage Stir-Fry
makes approx 10 cups
4 tbsp oil (any that you prefer)
1/2 tsp onion powder
1/2 tsp garlic powder
1 tsp paprika
salt and pepper to taste
1 small head of cabbage, shredded or diced
1 onion, diced
2 medium carrots, shredded
2 cups cooked and shredded chicken
1.5 cups tomato juice (OR chicken broth + 1 tbsp tomato paste)
Step 1: Add oil and seasonings to large frying pan over medium heat. Stir.
Step 2: Add cabbage, onion, carrots and chicken to pan. Let saute for approx. 5 minutes.
Step 3: Add tomato juice (or chicken broth) to pan and let simmer for 15-20 minutes or until cabbage is cooked through and the liquid has reduced to very little.
