I love a good sheet pan dinner because they’re simple, healthy and straight forward. Simply pile a few fresh, seasoned ingredients on a baking sheet and roast them in the oven until cooked. Boom. Dinner is done.

This recipe for Cajun Chicken Sheet Pan Dinner is quick to put together and tastes amazing coated with a spicy, flavorful seasoning.

How to Make Cajun Chicken Sheet Pan Dinner:

Preheat oven to 375 degrees.

Place the potatoes in a stock pot and cover with water.

Bring the water to a boil and cook for 8 to 10 minutes, until potatoes are just beginning to get tender.

Strain the potatoes from the water and set aside.

Place green beans in a bowl and add ½ tablespoon olive oil. Season with salt, pepper and 2 tsp Cajun Seasoning.

Toss to coat the green beans, then spread them in an even layer on one end of the sheet pan.

Add the potatoes to the bowl and pour in 1 tablespoon olive oil and 1 tablespoon Cajun seasoning.

Toss to coat the potatoes, being careful not to smash the potatoes as you stir.

Spread the potatoes in an even layer on the sheet pan next to the green beans.

Add the chicken to the bowl along with the remaining 1 tablespoon olive oil and 1 tablespoon Cajun seasoning.

Toss to coat and spread the chicken in an even layer on the remaining section of the sheet pan.
