Use this list of recipes when you have an abundance of eggs and need creative ideas to use them up!

 

Most of my chickens are laying consistently now, which means I have an abundance of eggs. We eat a lot of them so it hasn’t been too hard to keep up with their production, but I decided that I wanted a resource of recipes for when I need to use them up. Eggs are full of vitamins, minerals, good fats and omega-3s so they are an excellent addition to a healthy diet. With Easter coming this should come in handy for a lot of people and I can’t wait to try some of these creative recipes out.

    Yum! I love farm fresh eggs. Unfortunately, they're kind of hard to come by where I live. One of my favorite ways to eat eggs is to cook a big batch of scrambled eggs with cheese and chopped up potatoes. It heats up really well as leftovers, too!

    I love egg salad sandwiches, so I'll have to try the recipe in this post. My husband would love to have chickens, but I bet they are a lot of work!

      Not too bad, you just have to collect eggs and make sure they have food and water. Also, you have to clean out the coop once in a while.
