This Slow Cooker Pesto Chicken and Rice is freezer friendly and full of flavor!

 

       I don’t know about you, but my life gets pretty busy around the holidays and I’m always looking for frugal and healthy dinners that I can get on the table fast. That’s why I love Minute® Rice.      Now on to the recipe. If your a long time reader then you know how I love my slow cooker and this Pesto Chicken and Rice recipe is fast becoming one of my favorites. I froze a ton of fresh homemade pesto from my garden this past summer and this is the perfect dish to use some of it up. The oil from the pesto makes the chicken so incredibly juicy and tender. It’s fast, easy, healthy and delicious so there’s no reason not to love it!

How to Make Slow Cooker Pesto Chicken and Rice:

Place chicken breasts in slow cooker.

Sprinkle ranch mix and bouillon granules over the top.

Pour Pesto on top of chicken and ranch seasoning.

Cook on low 6-8 hours or until chicken is cooked all the way through.

Prepare Minute® Rice per package instructions.

You can either serve the chicken on top of the rice or mix it all together in the slow cooker. Enjoy!

  • 4 Chicken Breasts
  • 6 oz Bottle or homemade Pesto
  • 1 packet ranch dip seasoning
  • 1 tsp chicken bouillon granules
  • 2 cups dry Minute® Brown Rice

Instructions

  • Place chicken breasts in slow cooker.
  • Sprinkle ranch mix and bouillon granules over the top.
  • Pour Pesto on top of chicken and ranch seasoning.
